Sweet Potato and Romano Gratin
Preheat oven to 400F. Peel sweet potatoes and slice thinly either by hand or by using a Japanese mandolin. Butter a square baking dish. Place the sliced sweet potatoes in the bottom of the dish in an even layer. Sprinkle with salt and pepper. Place another layer of sweet potatoes on top and sprinkle with cheese. Follow this process, alternating cheese and seasoning until sweet potatoes are all used or until you have reached the desired thickness. Cover with tinfoil and bake for 45 minutes to an hour. Remove tinfoil and bake for another 15 minutes.
