Spinach Chicken Salad
In a hot frying pan add unsalted butter and chicken strips (salt and pepper to taste). Sauté chicken until browned on both sides. Deglaze pan with a little white wine. Add almonds and honey. Add garlic last. Let chicken simmer for approximately five minutes, or until chicken is cooked.
Toss baby spinach, feta and red onion. Stack even amounts in the middle of each plate. Place strips of chicken on top of the spinach. Pour the honey, almond and garlic sauce that is left in the pan, over the spinach and chicken. Garnish with sliced cherry tomatoes.
