Steak Sauce

serves 7

  • 2 chopped shallots
  • 1 tbsp chopped rosemary (chop extra for steak seasoning)
  • 2.5 tbsp green peppercorns
  • 4 oz. Upper Canada Dark Ale
  • 22 oz. of demi glace
  • 1.5 tbsp Dijon mustard
  • 1/2 tbsp butter
  • salt & pepper

In a saucepan melt butter and add shallots, green peppercorns and rosemary.  Sear at medium to high heat for one minute.  Deglaze with beer.  Reduce for one minute at High heat.  Add demi glaze and bring to boil.  Whisk in Dijon mustard and reduce to desired thickness.  Add salt and pepper to taste.
