Steak Sauce serves 7
In a saucepan melt butter and add shallots, green peppercorns and rosemary. Sear at medium to high heat for one minute. Deglaze with beer. Reduce for one minute at High heat. Add demi glaze and bring to boil. Whisk in Dijon mustard and reduce to desired thickness. Add salt and pepper to taste.
