Ginger Crackle Cookies
(makes 3 dozen)

Ingredients:

  • ¾ cup unsalted butter (softened)

  • 1 cup granulated white sugar

  • ¼ cup molasses

  • 1  egg

  • 2 cups all purpose flour

  • 1 ½ tsp baking soda

  • ¼ tsp salt

  • ½ tbsp ground cinnamon

  • ½ tbsp ground ginger

  • ½ tsp ground cloves

  • extra granulated white sugar

Method:

  • have all dry ingredients sifted together

  • cream butter & sugar until light, scrape down sides of bowl with a spatula, add molasses and egg, mix until incorporated, scrape down sides, with mixer on low add in dry ingredients and mix until incorporated

  • scoop dough by tablespoon and drop into a bowl with granulated sugar, after dough balls are covered with sugar place on a cookie sheet, lined with parchment paper, about 2 inches apart, bake at 325 degrees about 10 minutes, until golden brown, make sure to rotate trays half way through baking

  • allow to cool and enjoy!

  • cookies store well at room temperature in a sealed container for several days or freeze in a sealed container for several weeks.
