Sweet Pepper, Corn and Grilled Chicken Chowder

  • ¼ lb melted butter

  • ¼ cup flour

  • 3 L chicken stock

  • 1 L milk

  • ¼ cup olive oil

  • 1 tbsp chopped garlic

  • 1 cup frozen corn

  • 1 diced red pepper

  • 1 diced white onion

  • ½ cup white wine

  • ½ tsp hot chili pepper

  • 2 tbsp salt

  • 1 tbsp pepper

  • 1 grilled chicken breast

  • 2 tbsp fresh chopped parsley


Mix butter and flour. Bring stock and milk to a boil, reduce heat and simmer. Whisk in butter and flour mix.
In a soup pot, sear onions, garlic, corn and peppers, in olive oil. Add white wine, chili pepper, salt and pepper. Stir in stock and simmer for 15 minutes. Add small-diced chicken and parsley. Serve and Enjoy!
